Sweet Potato and Black Bean Tacos

Sweet Potato and Black Bean Tacos are not only delicious but also incredibly good for your health. Sweet potatoes are a great source of beta-carotene, fiber, and vitamins C and B6, which support vision, digestion, and immune health.





Black beans provide plant-based protein and fiber, helping to keep you full and satisfied while stabilizing blood sugar levels. This recipe is an excellent option for a nutrient-dense, meatless meal that is both hearty and wholesome.


Ingredients:
  • 2 large sweet potatoes, peeled and diced

  • 1 can black beans, drained and rinsed

  • 1 tbsp olive oil

  • 1 tsp chili powder

  • 1 tsp cumin

  • 1/2 tsp smoked paprika

  • Salt and pepper to taste

  • Corn or whole wheat tortillas


Toppings:
  • Fresh cilantro

  • Sliced avocado

  • Lime wedges

  • Salsa or hot sauce


Instructions:
  1. Preheat oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, until tender.

  2. In a small saucepan, heat black beans over medium heat until warmed through.

  3. Warm tortillas in a dry skillet over medium heat.

  4. Assemble tacos by placing roasted sweet potatoes and black beans on tortillas. Top with cilantro, avocado, lime juice, and your favorite salsa or hot sauce.
