Quinoa and Kale Salad  Recipe

This Quinoa and Kale Salad is a powerhouse of nutrition, perfect for a healthy living diet. Kale is rich in vitamins A, C, and K, as well as antioxidants and fiber, which promote good digestion and a strong immune system. The Lemon-Tahini Dressing adds a delightful tang while providing healthy fats from tahini and the

immune-boosting properties of lemon juice.







Ingredients:
  • 1 cup quinoa, rinsed

  • 2 cups water

  • 1 bunch kale, stems removed and chopped

  • 1 cup cherry tomatoes, halved

  • 1 avocado, diced

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup sunflower seeds


Lemon-Tahini Dressing:
  • 1/4 cup tahini

  • 2 tbsp lemon juice

  • 1 tbsp olive oil

  • 1 tbsp honey or maple syrup

  • 1-2 tbsp water to thin

  • Salt and pepper to taste


Instructions:
  1. Cook quinoa in water according to package instructions. Let cool.

  2. In a large bowl, combine kale, cherry tomatoes, avocado, red onion, and sunflower seeds.

  3. In a small bowl, whisk together tahini, lemon juice, olive oil, honey or maple syrup, water, salt, and pepper.

  4. Add quinoa to the salad and toss with dressing. Serve chilled.
